Taster's Note: Due to the delicacy of its varietals, we recommend using a medium grind and low-mineral water (spring water type) so as not to overshadow the subtle nuances of Gold specialty coffee.

How we brew it
Brewed clean & sweet
These lots are built for clarity. We love them through an AeroPress or Chemex, where the paper filter lets the sweetness ring out. Use 1 gram of coffee to every 15 grams of water, off-boil at 92°C, and don't rush the bloom.

Every lot is picked at Hacienda Las Mercedes, our family farm in the Farallones del Citará. The cherries are hand-selected at peak ripeness, then dried slowly on raised beds — the patience is what builds that sweetness in the cup.
