What is gourmet coffee?

Gourmet coffee is not an official grade. Nobody certifies it, so the word only means something when a roaster explains how they use it. We use it for coffee you buy for its flavor: lots with a cup profile you can recognize and describe. Of our six lots, two fit that idea best, Silver and Gold.

Silver. A honey process coffee with a medium roast. In the cup it shows coconut, vanilla and white fruits.

Gold. A combination of three varietals grown on the same farm: Geisha, Java and Wush Wush. It has a medium-light roast and notes of hibiscus, jasmine and subtle red fruits.

Where the flavor comes from. Both lots are grown at 5,900 ft (1,800 m) at Hacienda Las Mercedes in Ciudad Bolívar, Antioquia, and picked by hand in six selective passes. Both score 87+ on the Specialty Coffee Association scale, where 80 points already counts as specialty. We roast after you order, ship within 48 hours and vacuum seal every bag.

How to taste the difference. Brew both lots the same way, ideally on a V60 with a medium grind, and try them without sugar or milk first. Let the cup cool for a few minutes: sweetness and floral notes are easier to notice in warm coffee than in very hot coffee.

Beans or ground. You can buy these gourmet coffee beans whole, or have them ground fine, medium or coarse for your brewer. Each bag holds 8.5 oz (240 g).

How to brew gourmet coffee

Flavor-led coffees show best with a paper filter. We use a 1:16.5 coffee-to-water ratio for both lots.

Silver: V60 or Chemex

A paper filter keeps the cup clean, so the coconut, vanilla and white fruit notes are easy to pick out. Water at 195–205 °F (90–96 °C).

Gold: V60

We brew Gold slightly hotter, at 200–205 °F (93–96 °C), to bring out its hibiscus and jasmine notes.

Grind fine for espresso or a moka pot and coarse for a French press. Both lots come as whole beans or ground to the size you choose.

Gourmet coffee FAQ

What is gourmet coffee?

Gourmet coffee has no official definition. We use the term for coffee you choose for its flavor: lots with a distinct cup profile, traceable to one farm and roasted to order. In this collection that means Silver and Gold, both scored 87+ on the SCA scale.

Is gourmet coffee the same as specialty coffee?

Not exactly. Specialty is a technical grade: 80 points or more on the Specialty Coffee Association's 100-point scale. Gourmet is a descriptive word with no standard behind it. Silver and Gold are both: specialty by score and gourmet by flavor. Read more in what is specialty coffee.

What do Silver and Gold taste like?

Silver is a honey process, medium roast coffee with coconut, vanilla and white fruit notes. Gold is a medium-light roast that combines Geisha, Java and Wush Wush varietals, with hibiscus, jasmine and subtle red fruit notes.
